Thanksgiving Leftovers "Turkey" Sandwich (1)

A tasty Meatless Monday option that is guilt free, and a fantastic way to use up leftovers from Thanksgiving.

Thanksgiving Leftovers "Turkey" Sandwich (2)

This year Thanksgiving with my extended family is going to look a little different. My dad and brother are both non-meat eaters. I would not call them vegan, per say, but they try to avoid animal products. So when we gather as a family, concessions have to be made for us carnivores.

I try really hard to be accommodating of their dietary lifestyle, and have found I really like many of the meat-alternative products available on the market. They are often convenient, better for you and the environment, and taste great too. So today I wanted to share a new product I found that would work great for your meatless Monday dinner, or a meatless Thanksgiving.

Gardein Turk’y Cutlets!

Reducing meat intake even1 day a week can have a considerable impact on health. It increases life expectancy while reducing the risk of heart disease, cancer, obesity and diabetes. So changing my diet, even just on days when I want to accommodate my extended family, can result in increased health.

Gardein (garden + protein) is a plant protein that tastes good, is good for you and good for the planet. It offers the taste, texture and nutrition of meat—with no cholesterol and less fat and calories. Basically it is awesome. You can find it in the freezer section.

The Turk’y Cutletsare so good! They come 4 to a bag, and you bake them. They taste just like turkey, and they are so crunchy and yummy. I seriously loved these little sandwiches. I used cranberry sauce, cheese, and turkey, along with leftover rolls. And the result was a beautiful thing.

This is so simple I do not even know if I should call it a recipe. But the simplicity is part of the beauty. These turk’y cutlets are made with non-GMO soy and wheat. They can be cooked from frozen, and are perfect for those busy nights. I will definitely be using our Thanksgiving leftovers to make these. Even my kids loved them.

Gardein Turk-y Cutlet has 22 grams of protein per serving, cooks in just 15 minutes, and is a great source for fiber and iron. It comes with a gravy that I chose not to use, but would work well for those who want a vegan Thanksgiving.

Anyway, these are really yummy, so give them a try with your Thanksgiving leftovers, or for a meatless Monday! You won’t regret it.
