The perfect recipe for snickerdoodle blondies. Chewy cinnamon blondie brownie bars with a cinnamon-sugar topping.

Can you believe it’s December?! How in the world?! This year flew by. We’ll be saying the same thing again next year too, but seriously – SO fast!

I swear the second Thanksgiving was over I started seeing tons of photos of Christmas trees being put up or purchased. Have you put yours up yet? Sticking with our yearly tradition, we put up our tree this past weekend! It was on hold for a few days while I got over a stomach bug. Something is definitely going around and I’ll be glad to never experience that again.

I feel like I must have jinxed myself with our tree this year by talking about and dreaming of a huge tree because, what would be our luck but to put it up and find out that an entire row of lights aren’t working. Just one section, smack in the middle. How many years are you even supposed to get from these things? The tree itself is fine but the bulbs are definitely starting to go here and there. I’m hoping I can put a new string of lights in and have it look normal. Fingers crossed!

Snickerdoodle cookies are hands down one of my favorite holiday cookie. They’re classic and simple, yet so fun to make… and eat! I’m a big fan of soft and chewy snickerdoodles… never crunchy! So, I combined my favorite snickerdoodle cookie with my go to blondie bar into one incredible seasonal dessert.

If you make one blondie bar this season, it has to be these snickerdoodle blondie bars. They’re the perfect blend of soft and chewy, loaded with the perfect cinnamon-sugar snickerdoodle topping! These are an absolute must make!

Ingredients

  • 1 C unsalted butter, softened
  • 1 C granulated sugar
  • 1 C light brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 2 1/2 C all purpose flour

Topping:

  • 1/4 C granulated sugar
  • 1 1/2 tsp cinnamon

Instructions

  • Preheat oven to 350°F. Line a 9x13 inch baking pan with parchment paper. Lightly grease exposed pan and parchment paper.

  • In a large bowl or stand mixer, cream together butter and sugars. Mix in eggs and vanilla, followed by dry ingredients. Mix until smooth and no streaks remain. Lightly grease hands, press mixture into an even layer in prepared baking pan. Sprinkle with cinnamon-sugar topping mixture.

  • Bake for 25-30 minutes.

  • Allow blondies to cool before slicing. Store in an airtight container for up to several days.

    These were awesome! unfortunately they didn’t last very long – with 3 20-somethings in the house along with a snack-happy hubby they disappeared within about 2 hours. (i must admit to sneaking several also — addictive!)

    These look delicious! I would like to make a couple batches of these for my son’s Eagle Scout Court of Honor. I prefer to make them a week or 2 in advance. Do they freeze well? Any suggestions would be appreciated.

      I haven’t personally frozen them so I can’t give you advice on that. If you’re comfortable freezing other bars, it would be worth a shot though! Good luck! :)

    Could you freeze these? I would like to make these ahead of time and thaw to serve, my concern is what would happen to the cinnamon sugar topping.
    Also, do you think you could melt the butter and mix it all by hand?

      You could definitely mix by hand, but I would still follow the directions as is, using softened butter. My concern with freezing would be the same as yours, that the topping might have issues when thawed, it’s always worth a try though!

    I made this last week, and it’s super delicious! I used dark brown sugar instead of light brown as I didn’t have any at home. The result? A soft and chewy bar filled with cinnamon flavour. This recipe is definitely a keeper! Thanks, Rachel!

    My hubby loves snickerdoodles. I have been out of town for over a month and came home this last weekend. I really wanted to bake his fav treat. Because I am tired/lazy/really lazy I searched for a bar to try instead. Happily, your recipe came up and he is smitten!     Is this Gluten Free?

      It is not gluten free the way it is currently written.

      If you have not made this GF yet, I did using Ryze Yellow Bag flour and they turned out great. I’m sure any GF all purpose would work just fine, though.

    These are fantastic! My son has made them several times exactly following the recipe. I and my two other children eat gluten free. We made these last night using Bob’s Red Mill 1 to 1 gluten free flour and they were still fantastic! That’s the sign of a winning recipe in our house. We can enjoy it both ways.

    I made the recipe exactly, but it is a little dry. It has a good taste, but is there anything I can do to moisten it?

    • Rachel

      Be sure to use an internal oven thermometer to check your oven temperature as each one can vary, sometimes quite a bit. As far as adding some moisture back to the bars, you can heat them up briefly in the microwave and wrap or store them while they’re still warm. This will trap some of that heat. Another option would be to store the bars with a few slices of bread.

    These bars are AMAZING! They are crunchy on the outside and chewy on the inside. I accidentally put in too much cinnamon when I made them because my brain spaced that I was making a half batch, but you really can’t go wrong adding too much cinnamon :) this is totally going to be my go to recipe from now on because it is so easy and tasty and they go together and bake super quick!

    These are delicious! They taste just like a snickerdoodle cookie, but thicker and gooier :) For anyone wondering, using an online nutritional calculator, I found that if you say this makes 12 servings, it is about 370 calories per serving.     I made two types of bars today. This is one and the other is oatmeal chocolate chip bars. But I think this will get cleaned out first. Big hit for my grown up kids especially my daughter. They love snickerdoodle cookies but this is way better! A real keeper. Thanks for the recipe!

    Super yummy and quick to make! I baked them in a 9×14 pan for 25 mins and they turned out perfect… a bit crunchy on the outside and nice and chewy on the inside! Would recommend

      So glad you enjoyed them! As far as margarine goes, typically you can substitute it in most baked goods without much issue. I haven’t personally tried with margarine but I imagine it would be okay in this case.

    These are the best snickerdoodle blondies ever! I made them twice, once exactly as written, and then once with all dark brown sugar instead of half white sugar and half brown sugar. The all dark brown sugar was definitely more flavorful and chewy! These will definitely be my go to recipe for snickerdoodle blondies. They beat any recipe out there!

    OMG, THESE are DELISH!! I started putting all dry ingredients in the mixing bowl and discovered I had no baking powder…yikes!
    However, a quick search, I substituted for it and never looked back!! They are nicely gooey, sweet, cinnamon-ey, and awesome…try this recipe! You’ll like the results!

    Is it possible to use powdered cane sugar instead of granulated sugar (except for the topping)?

    I’ve used this recipe multiple times, it’s always a hit but I bought the wrong sugar.

      Substituting powdered sugar for granulated generally isn’t recommended.

    Can I use salted butter and just eliminate the salt?

      Yes! Since the recipe calls for 1 cup of butter, you can easily swap in salted butter and omit the salt entirely. Enjoy!

      I haven’t tried doing that but it might work okay! I’d recommend bringing it to room temperature prior to baking. And definitely do the final topping just before baking. Good luck!
