This easy to make breakfast casserole whips up fast and uses whatever, meats, vegetables, and cheeses you have on hand. It is savory, delicious, and so simple anyone can make it, but everyone will enjoy it!
I know I promised you guys almond milk this week, but I ran into some technical difficulties with the audio, so I am going to have to wait to get that all sorted. In the meantime, you will love how easy this breakfast casserole is to make, and how awesomely customizable it is. What do you like? Put it in it. Check out this video to see me in action. This casserole is not really an Eazy Peazy original. My son is in scouts, and they had a breakfast the week of Thanksgiving. He was so excited to go to the breakfast, but forgot to tell me about it. So he woke me up, asked me to drive him over. I was NOT happy about it. I was super tired, and had a zillion things to do, and he did not tell me in advance so I was not really in a place where I could drop everything, load everyone up in the car, and take him. But I drove him over anyway. And guess what? It wasn’t that day. He had the date wrong, and unfortunately for him, he had to miss the breakfast because on the actual date we had plans. He was so disappointed because his leader had been telling him all about this awesome breakfast casserole they were going to have.
Long story shorter, the leader knew how disappointed my son would be, and brought him over a slice, and the recipe so we could make it at home. I have changed the recipe up some to fit our personal preferences. But we love it! So as I said in the video, you can use whatever you have. But the basics are eggs (Egg beater or otherwise), cheese, crescent dough, and vegetables and meats!
You just layer everything in your sprayed casserole pan, pour the eggs over the top, add cheese, cover and bake! Easy peasy lemon squeasy!
So for this recipe I used bacon, feta, and spinach because it is such a delicious flavor combo. And I topped with mozzarella. But in the video I used ham, mushrooms, onion, and cheddar. So what flavor combinations do you love?

Ingredients
- 2 cans crescent dough 8 ounce cans
- 1 1/2 cups chopped veggies
- 1 cup meat of choice breakfast bacon, ham, sausage crumbles
- 1-2 cups cheese of choice
- 10 eggs whisked or about 20 ounces Egg Beaters
- Salt and pepper to taste
- 1-2 Tbs heavy whipping cream or half and half optional
Instructions
Preheat oven to 375
Spray a 9 x 13 casserole dish with cooking spray
Open crescent roll and lay it flat across the bottom of the pan
Sprinkle vegetables and meat evenly over
Pour whisked eggs over the top and season to your liking
Top with shredded cheese
Cover with foil
Bake 35-40 minutes until center does not jiggle too much

To make sure it is done cooking just give the pan a little shake. Does it jiggle much in the center? If the center is not set up, return it to the oven for 3-5 more minutes at a time until the center is set. Every oven is a little different, so just check it and cook until it doesn’t shake as much.
