Thanks to these easy Christmas gluten-free sugar cookies, everyone can enjoy your dessert table. In fact, they’re so good, you won’t need any other recipes.

Ingredients

  • For the Cookies
  • 2 cups + 2 tablespoons all-purpose gluten-free flour blend (with xanthan gum)

  • 3/4 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/2 cup sugar

  • 1/4 cup powdered sugar

  • 1/2 cup butter

  • 1 egg

  • 1 teaspoon vanilla extract

  • For the Frosting
  • 1/2 cup butter

  • 2 teaspoons vanilla extract

  • 2 teaspoons meringue powder

  • 4 cups powdered sugar

  • 3 -5 tablespoons milk

Instructions

  • Preheat the oven to 350°F and line 2 baking sheets with parchment paper.
  • In a large bowl, whisk the flour, baking powder, salt, sugar, and powdered sugar until well distributed.
  • Add the soft butter and mix with a spatula until it resembles breadcrumbs.
  • Add the egg and vanilla and mix gently until the dough comes together.
  • Turn the dough out onto a lightly floured surface and roll it to about 1/4 inch thick.
  • But out the desired shapes, then re-roll the dough and cut out more cookies.
  • Place the cookie shapes onto the baking sheets, leaving an inch or 2 between each.
  • Bake for 5-8 minutes. The edges should be lightly golden, and the middle should look done.
  • Let the cookies cool on the tray for 5 minutes, then move them to a wire rack to cool fully.
  • While the cookies cool, make the frosting.
  • In a stand mixer or large bowl with an electric whisk, combine the butter, 3 tablespoons of milk, and the vanilla. Mix until creamy.
  • Add the meringue powder and half of the powdered sugar. Mix on low at first, then up the speed to medium until smooth.
  • Add the powdered sugar in 1/2 cup intervals until the desired consistency is reached. Add the extra milk if it’s too thick.
  • Frost the cooled cookies and decorate with festive sprinkles. Enjoy!

  • The dough will be quite stiff. It may require hand-kneading to bring it together.
